I'm on a mission...to make a healthy, yet delicious, cookie. I made the "Neiman Marcus" chocolate chip cookies last week and wondered how they would do a little healthier.
So my first step I tried today. I substituted 1 c of whole grain wheat flour for the 2 c of enriched wheat flour, and I substituted 1 c of brown sugar (which is actually not much healthier than white sugar) for the 1 c of white sugar and omitted the 1/4 c of brown sugar.
And the verdict?!
They're great. They're a little more gooey than their enriched flour counterparts, but I like gooey cookies. They took about 9 minutes to bake, but they may have been a little smaller than the ones I made last week. And I don't think longer baking will make them less gooey...just burned.
So in the future, I'm going to attempt to substitute unsweeted applesauce for the butter. Has anyone ever tried that?
Then, I want to try to figure out how to put in less sugar without taking away the great flavor and without changing the consistency much. So that will be interesting.
And I could have made this substitution today, but I didn't have the right ingredients: I want to substitute a dark Hershey's for the milk chocolate Hershey's.

Yes, I've tried the applesauce substitute for cooking oil and butter. It works great! They just taste a little different. It is worth it for the health difference. The whole wheat flour is also an easy sub for very little taste difference!
I don't even keep white flour in the house. I sub whole wheat wherever white flour is required and it's served me well so far! I haven't tried the apple sauce sub but will try it next time I bake. I also do the brown sugar instead of white sugar- again, in everything! Happy cooking!
